Selected fresh Valpolicella DOC wine goes through a secondary fermentation process on top of Amarone pomace, which are still full of life. Hence we obtain a full-bodied, stuctured wine with a spiced, occasionally balsamic, aftertaste. Once the primary fermentation has been reached, it rests for 12 months in the secondary barrels. The final 6-month seasoning in its bottle turns it into an elegant yet mellow wine, with a long persistence on the palate.
